I see once warmed up a consistent 194 to 210 coolant temp always, and 190 to 205 oil.

I changed a coolant sensor next to the thermostat housing cuz the fan was coming on and off constantly. Right after I replaced it, I noticed that the fan comes in around 200* now.

Erm oil at 225? water at 200? what about that oil pressure, did it fall 10 pounds and stay there lower than normal? If so, then your oil has about had enough of that hot engine. That's why your coolant is climbing next.

250 in any oil, axles, trans, engine etc is way too much. You are pretty much already there at 225.

GOOD STUFF! I have a 96 5EK always seems to run high Temps. I always thought that running high 190s to 200 was high for 5EK but I guess not. I have a manual switch live in Florida now and it always seems to run that high empty or pulling heavy doesn't matter unless its cool evenings or so its always 190s. Its been inframed twice and it seemed to run slightly cooler some years ago. I was just concerned the water pump impeller may be acting up CAT is known for that. I heard you can I stall high temp thermos?
