I love to cook Italian food and am quite good at it. My ex-boyfriend insisted upon keeping the olive oil in the refigerator. Silly as it sounds we had screaming matches over this. We finally compromised. I had my bottle in the cabinet, he had his in the fridge. The problem with refrigerating olive oil is that it will congeal. In order to use it you either have to microwave it or sit it in a pan of hot water. This not only changes the flavor but the viscosity thereby changing the flavor of anything you cook.
