Storm ain’t moving... Twas supposed to stop here around 7am tomorrow morning but now they’re talking about it snowing till tomorrow night...

Welp. Should’ve stayed south and took the 95 in... but now I’m stuck in it.

Le sigh. May not be able to get these off till Tuesday?

I get mine from Costco and do it exactly the opposite of you, I "dry age" them for 24 hours (season with Himalayan salt then rest them on an open rack in the fridge) then start them off in the oven at 200 for an hour then finish on a smoking hot cast iron skillet. The "chef" term for my way is "reverse seared". The problem is the "smoking hot" cast iron instantly sets off the smoke alarms in my apartment then the elderly lady above me freaks out and calls 911. Fortunately the Waxahachie fire department now has my number and calls me to ask "whats for dinner" LOL

Next time cook up a bunch extra. Let the FD come and feed them well. If you ever have an actual fire, they'll be there in 10 seconds.
