Bodybuilder here, getting into trucking, read my prior threads on this. There is a lot we can do with a highly creative mind and the right equipment. Portable break down stands, adjustable bench that folds down, dumbbells like the ones you mention, and olympic weight set, bar and curl bar. Pull downs or a puller enough to get in like rows and lat pull downs will be the limitations.
Plan for a gym stop like once per week. That is realistic OTR. You won;t be hitting the gym every night. But it the setup above, you can still build and get and keep n shape. I am a serious bodybuilder, not some dude ho does pushups and sitsups. I lift hardcore weight and with the setup above, I'll be ok. The one day per week and your 34 hour reset are the days you hit your back and hardcore weight training.

Have you ever been to a truck stop in your life? Majority of truck drivers are just a bunch of big fat slobs.... LMFAO. Not to mention I wouldn't want to be doing squats in the empty space next to me, the way these people drive.... I do keep some running shoes in the truck though I'll go out for a jog occasionally. Just depends on where I stopped at for the night
