I might be wrong but I would reconsider that. Is the leak from a bad silver solder joint ? There isn't much experience with plumbers working with copper pipe anymore because of the market shift away from the expensive copper and towards the cheap plastic, but copper pipe is still the best building materials for plumbing in my opinion. It's not a leak from a pinhole is it ?
Fixing a bad solder joint is way cheaper than replacing the whole system. The trick is finding a experienced plumber. I spent two years soldering and it's easy. Just most people don't know that the trick is to get it completely clean ( wire brush thoroughly completely around the area ) before you apply the heat. Get it hot and have plenty of flux ( keeps the contaminants boiling out of the metal bond ) and apply the solder quickly and take the heat off right away. The bigger the glob is NOT better and actually makes a weaker bond. Very simple process but not as many people are familiar with it now.

Copper is so good at lasting for a long time with minimal corrosion plus it's a safety deal with the grounding against lightning strikes.
    Just my two cents.

I'd never heard of that PEX stuff for house plumbing. We had it on the core winders I ran at the steel mill but those were for running the pneumatic guillotine for cutting the steel foil. I didn't know that those were common, or could be used for water. Really easy to work with those.

I would highly consider that in a new construction project. It has to be way less time consuming than copper or PVC.
