I don’t know where you ate BBQ in Texas, but I’ve been eating Texas BBQ for about 40 years and I’ve never had any like you described. Dry rub, long slow smoke, sauce is a condiment not an ingredient.

Mikeska's sauce is a heavy vinegar based type which i really don't like. I prefer just the meat, no sauce.
But back on topic. Had Texas Best in Tyler and the brisket was kind of dry and had no taste. Could have been just a bad day, but first impressions(well).

My favorite BBQ chain in Texas is Rudy’s, though parking can be problematic if you’re in a truck.

For great barbque in Texas, hit them guys at intersections or just in the middle of nowhere on the two lane roads with a pit behind their rig. hmm good eats always. Inmans in Brady and Buchannan #### has been one of my go to spots for over 50 years, dad could not go through Brady without getting some barbque goat.

Ahh the one pound pork chops!!

She left there some years back. They went up on her rent. I was there one day and asked for a sandwich, it was 8 bucks, small, and tasted horrible. I threw it out the window. So when I came out of Miami I stopped by there again and asked what was going on with the food. Then was told it was new ppl there and the famous bbq lady had left.

Not sure where shes at these days. Could be wrong but I think she mentioned years back that she was from Michigan or Wisconsin. I forget witch one. She use to have a line of truckers at that spot in the evening.
