And then there's metal composed like classical music...
They often use a full symphony orchestra during live performances (or a recording of the orchestra track when the venue is too small). I keep missing them every time they come through town.
Their drummer Francesco Paoli is easily one of the cleanest and most technically proficient drummers I've ever heard in my life. And he makes it look easy.

I can appreciate the technicality of this sort of music. I just don’t enjoy listening to it...

Extreme metal is an acquired taste. I didn't even get into it until 2012. Post-Cowboys From Hell Pantera and Machine Head were my introduction to harsh vocals, then it just went from there.
The point-counterpoint between the clean, operatic vocals and classical guitar/cello with the heavy drums, distorted guitars and harsh vocals of the "Epilogue" song is a thing of beauty. It really is on the level of a classical composition.
But there is a lot of "bad" extreme metal out there too. It's a matter of finding the stuff that is well-made and also musical, and there are so many subgenres now, you'll have a hard time not finding something you can enjoy.
This is one of my favourite black/doom metal albums of all time:
A lot of metal genre definition isn't necessarily the sound, but the lyrical themes and atmosphere the songs create. When you read the lyrics of "The Mantle" and listen to the songs, it is very clearly black metal, even though the guitars and vocalists are not screeching at the top of their lungs like a demon. -
It is dated a bit.

If you haven't yet... give Bathory a listen. One of the pioneers of several different types of metal. Their early stuff is a little harsh in places. Nordland 1 and 2 are my favorites.
