I work for crete, and normally they tell you in orientation if they cant verify something that you have 30 days to get it for them. However if you can't find a w2 then they will accept a notarized letter saying that he worked there. Thing is it does not even need to be from someone with the company. Wilmer terminal will accept a letter from anyone as long as it's not from a family member as proof you worked there.

Some people do landscaping work, painting houses, carpentry, auto mechanics, for cash only.
It isn't that uncommon at all, especially in high tax states like New York. -

On a side note a lot of FedEx ground contractors pay by check and add a few hundred on top with cash every week. -
I had entire companies go bankrupt and out of the industry all together, not a problem when you have years on paper. They simply say oh we don't need that now there is nothing to verify. (Except through SSA...)
