https://www.amazon.com/Instant-Vortex-Plus-Rotisserie-10/dp/B07VM28XTR is what I've got now. It doesn't really get super hot on the exterior. It's kind of high power for a truck, though, so I've only been running it on the generator and haven't tested it on the inverter. I've also got the Volvo workstation, so it doesn't really get near anything flammable.

In the old company truck, a 2015 Cascadia, they would remove the cabinets on the passenger side. So I mounted some angle brackets and a shelf and attached a pizza oven to it. It was kind of weird cooking from the top bunk, but it was out of the way.

As long as you exercise common sense, there should be no problem having most toaster ovens in the truck.

I have the smallest one from Walmart. It fits perfectly in the TV cubby.

As long as the supply 120v wiring from the generator to the cab is installed properly and in good shape, fine. I wouldn't leave it unattended. And I wouldn't use it on an inverter, unless you also want to call for a jump start for the dead batteries.
If you are looking to a truck refrigerator, I can highly recommend this fellow. He has been in the industry for at least 25 years. The unit I bought from him in 2000 is still working fine in the truck you see on the left.

I want to install a wood burning pizza oven. Just need to figure out the duct work for the chimney.

It's been done Steve! People are putting wood stoves in RV's these days.
