The way I had this explained to me was a driver was NOT allowed to log above the speed limit. You only have 10.5 hours to drive. It's possible I guess, but you won't do it every day.

You wouldn't want to do it. If you did ,then someone would expect that you could do it all the time...

I can't remember what my last company's company speed limit was. It was either 60 or 62. If you logged faster they would write you up.

You can get close only running 60, not quite, but close. Maybe 20-30 min short.
If you are lucky to not run through any traffic...

Governed at 69 mph, I can only do 670 miles +or- if empty and not going across major urban areas. But I try not to, it would give dispatch too much expectation...

There is a whole lot about logs I would love to get deeper into. It's a bit like the 3 things you could never discuss with ole Archie Bunker.
1. Politics
2. Religion
3 Everything else.
Add logs to that list. My view is drive and deliver, get all the miles you safely can get. -
Depends on where you are.
If it's wide open interstate and all you have to do is ride... yeah. 700 is doable.
If you're heavy... climbing lots of grades... in the North East.. in bad weather... get caught in a city at 4-6pm... or like to stop and pee every 2hrs and throw the ball for your dog... No. You won't get close.
You gotta be a grinder to do 700 in a 65-68 truck.
And you have to know where you're going to be stopping for the night so you can run your clock down close to 0:00
