Are you sure it isn't an electrical problem? Is everything else saying on, like the radio, or blower motor? ECM's are actually pretty good and would suspect one bad only as a last resort. I have seen many ECM changed over the years only to have the same problem reappear a short time later. Ok, you are just spinning your wheels here and throwing parts at it. Have you done a fuel pressure check yet?

Should I check the fuel pressure when it's running or when it won't start because by the time I get it towed back to the garage the next day it starts.

This is what I do. I have a compuchek fitting that plugs into the fitting on the fuel filter housing cap. My fitting has about 7 feet of 1/4" air line to a 0-100 psi pressure gauge. I plug into the filter housing, then run my line under the hood, close the hood, and bring my gauge into the cab through the vent window or just leave the window down. Then I road test it. You need at least 20 psi to start. 65 psi is normal running pressure. Sometimes the engine will make 65 psi no problem at idle, but not under load when it is using more fuel. This is why a road test is so important. Find an open stretch of highway and floor it! Engines will produce the most power and use the most fuel at highway speeds under full load around 2000 rpm. Watch your pressure gauge. If you maintain a nice 60-65 psi, then fuel is not your problem. Usually what happens is as soon as floor it, the pressure drops to near zero. Once it hits zero, it is only a matter of time before she quits.

Truck is at the dealer now. When it arrived I had fuel pressure but when it shut down it didn't have any oil pressure. Around 4 pounds or something.... from what I know they checked fuel pressure. They checked under oil pan for the pickup tune and bearings. Checked pressure relief valve and also put on a low pressure oil pump. Got it up to temperature and took it for a ride and shut off again. Just keeping the forum updated here through the process hopefully this can save someone else from spending thousands in repairs like us. Thanks for everyone's help so far.

Low oil pressure would have caused a code.
