    I did about 2 pounds a week and even that was too fast
    Slow and steady really wins the race here

    Plant based dieting comes with a lot of research. Not just what you eat, but how they work together. Plant based iron uptake is greatly increased by vitamin C. B12 pretty much requires supplementing through fortified cereal, nutritional yeast, or vitamins. Proteins are typically incomplete, so it usually requires diversity in the diet throughout the day in order to get all the required amino acids. Luckily, there are a ton of good resources on the internet to help out with nutritional requirements.
