When I'm on the road, the last thing I would want to be doing during a 30 minute break is driving. So far this week I've done the following on my 30:
1. Pulled in to a rest stop in Wyoming that has a paved trail leading up to a gazebo with a bench overlooking really neat cliffs. Chilled out in the shade with a hot breeze blowing.
2. Shopped at Walmart - restocking food for the next 5-7 days.
3. Nap.
4. Shopping at a really good truck stop in Nebraska.
If you are driving around in the truck and your company has a Qualcomm unit, then it will automatically log you as driving and you won't qualify for your 30 minute break (if you go over a certain speed), so this precludes the idea of practicing shifting (unless you practice a lot shifting from 1st to 2nd to 1st to 2nd....)....
