So If I drive 5/11 hours and then do 8 in the sleeper , its as if those 8 hours never happened so I'm still at 5/11

Except now when I reach 9/11 I can take a 2 hour off duty time and I will be back to 7 available hours. Since we won't count any hours before the first brake (which was my sleeper in this case)

Right? And I can also swap the break and sleeper birth for same results

At the end of your 2nd break everything before the END of the first break, including the first break itself, fall off of your 11/14 hour clocks. While this isn't a big deal with your 8 hour sleeper break it is important to remember for the 2 hour one since that is supposed to be counted against your 14 UNTIL it is followed by an 8 hour sleeper break. :)
