I don't what truck I'll end up with next week but I have a general question on this. I'll be doing most if not all of my resets on my home time (hopefully) since I'm going to be MWR now. I'll be plugging in the truck when on home-time at the drop yard. Will doing this charge the battery pack?

Depends on what truck you get. My Century does not charge when plugged in. All the plugging in does is keep the block and fluids warm.

The short answer is no. That is an option we did not get. At least there is a battery disconnect in the most of the new trucks. It disconnects all the batteries not just the ones that start the truck.
