I have the 12v Coleman and a microwave. I usually spend about 60 bucks every 2-3 weeks at Wally World. I usually get out and have a sit down meal once or twice a week. Usually that is at the buffet where I pig out.
Here's a tip for stocking the cooler or fridge: Take the stuff out of the boxes. You can fit a lot in there that way.

Plan ahead and only buy what you HAVE to at the truckstop. If there's a Walmart nearby where you unload that allows truck parking, use it while you wait for a dispatch if you're not preplanned. Use that time rather than sit in your truck at a truckstop.
Work smarter, not harder. That way your per diem deduction for your meals will be padding your pocket, rather than allowing you break even at the end of the year. -
