Is there a chance that rags were placed into the intake tube coming from the air filter(s) during the painting process that weren't removed?
Unlikely if power/smoke are unaffected, but just throwing it out there.

Which brings me to my next question. From what I've read online you can only extend the probe wiring using k type thermocoupler wire. I've read articals that have said not to use crimps or connectors because that introduces a different type of metal.

Now my probe coming off my turbo elbow has a weatherpack connector. Should I cut that off and twist k type thermocouple wire onto my probe?
