I use a 2,000 watt pure sine wave inverter. I was surprised at how much better it worked over the modified sine wave inverter I had before. Quieter and cooks faster. I bought an induction cook top that wouldn't run on my old inverter.
If you use an inverter that big, I always use welding cable with a 200 amp fuse. Works great that way.
Keurig uses 1,500 watts so you definitely have to go at least 20% higher.

Simple option for Kreurig K-cups is the My Joe from Presto... It's basically a manual Kruerig press. Heat water either with a microwave or 12v pot... Place a K-cup in the bottom and the hot water in the top and place the top on it and manually press the hot water through the K-cup.

I used farberware. It is single serving size and it uses k-cups. It is perfect, no need to clean, put k-cup of your choice add water and it is done 6 minute. And throw away used k-cup. They sell it walmart for $35. I do not know what watts is but i have 2500 watt inverter and it show 600 watts on the screen when i am using. Also it is small so it does not take lot of space.

It's a manual device called Presto MyJo. You heat water for coffee any way you decide, including 12v immersion heater. Insert a K-cup.
