Im not sure but since its unpasteurized Im sure it dosent hold very long at all or they would have storage tanks for just these reasons. I follow a farmer for Tillamook out here in Oregon on Facebook, so I’ll ask him, but he has mentioned that the farmers have insurance for this sort of thing.

There are no "holding tanks" for milk. Storing milk in a tank wagon is also not an option.

They can make things work a little more, but then you have other issues like cleanup. Most plants run close to capacity as it is, the spring flush isn't as much a factor as it was with pastured cows. If there is no where to take finished product, the raw milk must be disposed of in non productive ways, you can't even feed it to swine or poultry anymore unless it is processed first. In large scale at least.
