harder then ever to get hired plus now my
wife wants to drive as well, want to become
o/ops in the near future and would like some

It's a new trucking world now. Talk to Central Refrigerated; I understand they will train you and your wife and let you team together. Lots of good team companies out there. Here are a few to look at for future reference:
Mesilla Valley - terminal in Denver
Marten Transport
Fairchild Freight
System Transport (reefer & flatbed divisions)
Interstate Distributor
Navajo
If you both go to a private school vs. Central Regfrigerated, talk to the companies you like, and ask which schools they recognize. Most important : make sure your blood pressure is good, otherwise you will be rejected; it's the new federal law.
Stay away from companies that push the lease-to-own in the beginning. Become familiar with the new trucking world first, then after a couple of years buy a truck on your own, not through a trucking company. Best wishes. -
