When Ed shifted to a lower gear, it did not sound like he was grinding the gears at all, so I don't think that Ed was doing #3. Ed did not rev the engine up on a downshift at all, so Ed was not doing #2. I think that Ed did #1.

Just out of curiosity (I'm not arguing with you), why do you call #1 "the uneconomical way"?

My theory on that is that Ed was slowing the truck down until the transmission gear speed matches the flywheel speed.

    Numb Thanks this.

I can FEEL the truck shaking and bucking...

(At least once a month ill leave the lever up and be trying to start from a dead stop in 6th (13sp), it for whatever reason does not like it)

This is what happens when you're not paying for brakes.

Yeah, there might have been a little of that.

Because you're not using the natural braking effect that the engine offers by letting the rpm's get so low. Instead of downshifting into a gear that will allow maximum engine breaking (1600-1700+ rpm), you are letting the truck coast down with little to no engine braking and a lot of service brakes.

So method #3 is uneconomical because it wears down the brakes faster?

Finally we find a driver that knows what he is doing. Ed. is that guy.
We learned that technique back in the tachograph era. It wouldn't show on the graph when you shifted down or up only the speed would drop or go up.
I can only describe the technique as a very gentle touch on the fuel pedal , not revving the motor and catching it on the way up or down on the rpm.
    Its not a racecar.
It's way easier on the whole drivetrain this way.
