So, could my leveling valve be broke ? Not holding pressure and dropping the bags? Possibly the way it's sitting in the fine? Idk?

Do you think the way that u-joints is sitting when bags are dropped is normal ? It is maybe a paperclip gap before hitting ...if the paperclip Is laying flat on a table

I wouldn’t think so: look at your leveling valve rod see if it’s connected, and see if it’s not broken. I’d think even with the suspension dumped the driveline wouldn’t be that close. Might want to check for stops in your suspension n make sure they are in the correct spot and at the correct height.

my money is on the springs. springs are wore out. shocks only keep the down force of the tire on the road. the springs carry the blunt of the weight. air bags added to the help the weight. if the ride height is correct with the lever valve then the springs must be wore out.

Is that possible? For all 4 of the rear springs to be worn out ? How would I be able to tell ?

Sorry but you have a botch job. The the picture you posted the the frame gussets on the right and the left are not the same. Never saw a cross member above a U joint like that which I recall. That truck has been stretched, patched or spliced and it was not done correctly.

The air springs could be cracked leaking air or some leak in airline or valve, fittings they need to hold over 50psi to lift 40,000lbs load ; Did you hear your air compressor running nonstop, lossing oir pressure? or weak snapped springs or torque leafs.
The air springs are sitting on Z springs rear end pushing against it to lift the frame, they work together, so I would check both air or Z spring / torque leaf combo, lose U bolt shifted axle.
