Bring groceries, cook in the truck. Microwave food is no better than fast-food.

If you have an inverter with enough watts you can use a crockpot, or instant pot. There are many YouTube videos. Don't use anything with an open flame. Setting the truck interior on fire is easy and bad.

Bring home made food from home and nuke it. When my wife planned dinners and I knew I was going to be out she made extra to go with me. Plus many of the big chains have got WAAAAYYYY mire choices to eat healthy nowadays. Fresh fruit yogurt etc is readily available. Whip up casseroles stews and soups that are easy to containerize and keep in thermoelectric Coleman. Rub low on food? Make SMART choices from Subway. Eat it like an open face sandwich by ditching top bun and you cut carbs in half.

I eat canned soups. Right from the cans, just use a plastic spoon. And I make sandwiches.

Can also heat the soup for free at truckstop microwave ovens.
I eat lots of canned tuna & canned salmon and soups, even at home, because that's what I like.
The tuna & salmon doesn't have to be heated or cooked; it's ready to eat right out of the can. I buy it at Walmart or Sam's Club.
Put the salmon & tuna on whole wheat bread and that's all there is to it.

This stuff is delicious. Heat it or eat it right out of the can. It's pre-cooked.
