Lol....yeah, TX has the brisket figured out, but TN is the BBQ pork shoulder kings, imho, and a Memphis shoulder sandwich is something everyone should have at least once in life...lol... I've heard the Tarheel has the best whole hog pig roasts, but I've never found a joint down there that I could park the truck at...

Yes TX has some great BBQ but perhaps most of it is away from the main freeways. We have Rudy's and the Salt Lick in our neck of the woods near. Austin. Good strong stuff to whet the appetite.
Also if you ever pass through Orlando FL, you want to check out Cecil's, but alas it's not in a good place for a truck although there's a Publix supermarket close by. You could park behind it. Cecil's is on one of the main drags just south of downtown. And they do fantastic BBQ ham. Something I love but rarely see.
