So I'm currently deciding whether to install a new fifth wheel or stay with the the old Ball Hitch in Truckbed?
Does a fifth wheel increase Trailer stability?
Performance while Turning?
Better on bumpy roads?

I prefer a gooseneck without exception, if you're rig doesn't feel "stable" you have something wrong; it is not the style of hitch.

You can have both type of hitches for your truck and swap them out as needed, IF you buy both hitches they are available options as factory pug mount or aftermarket under bed mount. Aftermarket I recommend the B&W hitches very well made, check out etrailer.com all type of hitches on there. The trailer coupler can be changed out for either type, couplers also available on etrailer.com
The ball setup is meant for uneven terrain (better for bumpy roads) because it allows the trailer neck to swivel 360* vs the 5th wheel only allows front and back tilting (unless you have a fully articulate 5th wheel).
Either setup makes no different on trailer stability, if you have trailer stability problem (dog tracking) it's axle alignment problem check your trailer springs, mounts and bushings. -
If you can't look at your back window a ball is hard to hit. But with all the cameras out there now its easier. I towed with balls for years, and never a problem, other than the initial hook up. Some companies have balls that you can hide/remove to give you the bed vac, which is easier than unpinning a 5th wheel.
