My wife is the soup fan and she slowly converted me, it doesn't hurt that she knows what she's doing in the kitchen and can turn leftovers into a a feast.
For the rotisseries, they're ready to eat and usually come in 2-3 different flavors, all tasty. Aside from a Little Caesar's $5 pizza which is tasty but not that healthy, and rarely has truck-friendly parking, I don't think there's a more bang-for-the-buck road meal out there.

Don't sell yourself short on not knowing how to cook, you can pick up a crock pot recipe book from the thrift store for $2-3 bucks, run a normal 120v crock pot (Kohl's always has sales of really nice ones for $20-$30) off an inverter, and enjoy tasty/healthy meals every night. We try to camp/RV every chance we get and the crock pot is an easy way to eat great, save money, and avoid putting on road weight from eating high-calorie/low-quality fast food. When you hit that next-level-crock pot-kungfu, you can run two for dinner AND breakfast. There's something about waking up to the smell of cinnamon porridge....
If you're a coffee/tea guy, Amazon sells a $10 electric kettle that pays for itself after the first 3-4x you use it. Make sure your inverter can handle it though, the heating elements on some of them draw 1500W (vs 300 for a crock pot). That said, it's probably easier to pick up a quality insulated thermos, or maybe 2, and fill them in the morning with hot water at the truck stop/store/etc. Stanley and Hydroflask are both lifetime warranty and I've been happy with the product from both and the customer service from Stanley (they replaced a couple defective purchases with no hassle). I just picked up a 64oz Stanley insulated growler yesterday for $25 on a Slickdeals sale.
As for Wal-Mart parking, the few times I've been hassled over my 200+ visits (I like Walmart), a polite word to the manager about wanting to shop and showing that the rig isn't blocking anything has resolved the issue. I get not wanting to be hassled but chances are in a large or Super WM with plenty of space, no one is going to say a word to you. The fool proof plan is to find the WalMarts that are in a complex with a Lowes or Home Depot, they usually have truck entrances and plenty of hassle-free parking.

Fructose in particular in the volumes consumed by the average American is what is causing the epidemic of obesity, heart disease, cancer, etc. The average American eats 180 lbs of sugar, or 90 lbs of fructose every year.
There are hundreds of different sugars. Unfortunately the modern food industry, in the interest of cost, packs processed foods with only two.
Sugars are the building blocks of carbohydrates. Another common term for carbohydrates is...
...fiber.
Fiber is THE building block of all plant based matter. IF YOU COOK IT, IT WILL DESTROY LONG CHAIN FIBERS. You absolutely need long chain carbohydrates for health.
For this reason I have transitioned to a diet that is based on raw fruits and vegetables. That's the majority of what I eat. I still eat meat, but now I rarely eat breads or other grains.
Much more of my calorie intake is fat, in the form of olive oil or fish fat (salmon or mackerel). Lipids are the building block of fats. Turns out essential lipids in the kinds of fats I eat are necessary for synapses in your nervous system. In other words, eat high quality fats so you aren't stupid.
I used to cook in the truck. I threw away the microwave and slow cooker. I lost 40 lbs without effort. The last time I was sick was three weeks of hell, starting with swollen lymph nodes under my jaw, then a sore throat, then a banging headache, cough, and stuffy head. That was in January...

By rights I should be sick a lot. I am 61 years old, pulling a flatbed and working outdoors in often miserable conditions, with a life history of getting severe colds and flus at least a few times a year.
Start studying up on diet and realize that all sense of taste is acquired. Google search terms like "human microbiome", "gut bacteria", "sugar and health", "sugar: the bitter truth", or "plant based diet".
I used to be able to down a quart of ice cream at a sitting. Several Hershey bars a day. Now just to walk down the candy aisle offends my nose just like walking down the detergent aisle.
