most trucks have 4 batteries, to my understanding. Also depends on the size of the fridge. Not sure if you have an APU. But sounds like from your question you don't. My fridge doesn't typically draw enough power to kick my APU on. So most likely it won't.

Depends on temp outside and state of batteries. If ambient temp hot it will run fridge more. I would try plugging truck into shore power if you can. Or trickle charger. Not sure if you park truck at your home or not.

on the one truck that i had, there is a battery cut off when the voltage drops to a certain set volts. this way, the truck can still start up.

that truck also had a battery disconnect at the drivers side of the seat, to disconnect all the power and save the batteries.

frankly, what's in there, that you need it to run constantly?

if all you have is water bottles and soft drinks, they can get cold again once the truck is up and running.

if you have food, pack it in a bag, and take it home. replace it with fresh food. there are expiration dates on all fresh food items.

If you want it to last I’d turn it off. I turn mine off every weekend. 6 1/2 year old volvo factory fridge still works great.

Yes I leave the fridge running. Doing a reset or overnite should not drain the batteries down on a proper truck fridge. Aftermarket fridge I can not say. Most trucks have a low voltage disconnect feature that turns off power to the bunk if batteries run low. If it does test your batteries because they might need replacing.
