All the kill floors I have been to used an air gun device like the one the bad guy in No Country for Old Men used.

I drank milk right from the bulk tank for 17 years. Watched my meat slaughtered. 40 yrs ago they hit the cow between the eyes with a hammer to stun it then one between the eyes and one in the top of the skull. I still love steak

 

I seen them use something like that when a hog is to stressed out or has broken bone after getting unloading
But what I got from the video they make you watch is they kill them in a way that produces the less amount of stress and they don't let you use hot shots to unload them for same reason they say it negatively affects the meat if there overly stress and and can cause them to die from it witch they won't use for human consumption
