Scaling them is pretty easy once you learn your truck and trailer. You will have room to play with on each end. With my truck I’m good for 55500 on the truck (12k steer and 43500 drives and lift) and 53000 on the 4 trailer axles. But I bridge out at 105k so that leaves me wiggle room if the load is heavy on one end or the other.
You’ll have to familiarize yourself with the bridge laws so you know what your 7 axle inner bridge is (assuming you’re talking about a 4 axle truck and 4 axle trailer). Most places are the same, except OR. They cut you back a little bit, I bridge out at 102k there.
Grades will be slower both up and down. On flat ground you can drive as you normally would, you have 3 extra axles with brakes to make up for the weight. I can tell a huge difference between 105k in the states on 8 axles versus 102k in Canada on 6 axles.

The unspoken question the OP was asking, I think, was since heavy haul
pays better he wants to do heavy haul. If the only question is which pays better
than heavy haul may not be for you.
Speciallized jobs may require you hang up the phone and pay attention.....

I just Ran my first real terrain coming down 77 through West Virginia- Virginia to Greensbore NC
At 80,000 with a smooth bore tank full of Cream it was a Challenge climbing with the 10 speed.
The 5% downhill grades were going smooth until that last long Drop coming into North Carolina
Let my Speed get up to high, wow that can happen in a hurry, especially when surrounded by fast moving traffic.
Had to start getting way aggressive and became a little concerned about my speed with some rather sharp curves coming up.
I was starting at the top of the hills at 50 mph after cresting in 9th but before I knew it at the end I had let my momentum get a little out of control.
Going to be fun heading home light and empty, but next time loaded I am going to Creep down.
I Got to Safely see how quickly your Speed can climb out of control when running at 80 thousand.
