I prefer to keep the mirror as well,but you said you're doing chops, so...
Take a die grinder with a cutoff wheel to it. I wouldn't wast my time with a drill. They're huck fasteners, you'll just break bits. Take off the bracket, silicone the holes (let it cure!) And mount your chops. Pics when it's done!

I have that same mirror on my 379, I took it off because 1, I never use it and 2, my dog used to bump his head on it all the time. I left the bracket on the door until one day the dog stood up on the armrest to look out the window which I had half way up and his collar got caught on that bracket. He freaked out and managed to get himself unhooked so I put the mirror back on and pushed it strait up.
Is that a pistol grip shifter I see in the window? -
