How often do you grind?

last truck I drove, didn't matter who was driving it, it would always grind just a little on the 6-7 shift. every single time.

Every chance I get. But I only get home every 3 weeks or so...

I still do on occasion, though since I float I use a very soft pressure on downshifting that I guess could be called a "grind" though it's more of a bumping. Once I feel that stop I know I'm good to drop it into the lower gear. But even then there's times when I just unloaded after having run all week under a 48k load and I have to get used to being empty again and I'll be starting off on a hill and grind a gear or two. Not a big deal really as long as you are jamming it into gear or grinding the living bejesus out of the gear.

You pretty well covered it...the way to tell the guys who are good is what happens when they miss. They'll know they've missed without the tranny even grinding, and be out and back in with at most a low growl. You'll never hear that heavy grind of a shifter forced against the dogs.
