I am trying to remove these sensor clips without breaking them. How exactly do these come off? Or do they just seize up with time?

The terminal in the top picture.
I believe you squeeze the small tab on left side by the light grey plastic. Then pull back on the connector.

The other picture I can't see very well.
Most connections are similar in function.

Yes the ends to get brittle over time.

I am not familiar with this style connector. What engine?

Try removing the grey lock tab before sqeezing to black tab to release. Also something I have found helpful........before removing and electrical connector that is plastic. Spray the connector with a 50/50 solution of dish soap and water and give a good blast of shop air. This will help remove any sand or dirt locking the connector together and ussually aids in releasing the connector without breaking.

Most dealers should stock repair ends or connectors to replace those that are easily broken without changing the entire harness. Once you have Identified the connector maker you can order online as well.

For Both of those connectors, the grey tab should pull back about 1/8”. Pushed the connector on, squeeze ithe Tab and it should unlatch. If it doesn’t, it needs cleaned out. I usually use shop air and tap it lightly with a screwdriver handle.

If all else fails, fish a pick in behind the connector and manually lift the latch
