I fold it up like I would a chain-end strap, about 2.5 feet of loop, then pass one end through the handle of the ratchet, double it over and wrap a bungee around the doubled loop and secure it to the rub bar.

Hard to describe, and understand some descriptions!
Think @old iron and @Pipe 40 do something very similar to me,
Make about a 2 foot loop out of the slack and basically half hitch it around the strap, then I put the tail through the loop so it can't pull out.. Has worked well for me, even when it's up in the wind. fairly quick and easy also.
And yes confuses the heck out of most "helpers" -
Only thing bad about that is your ratchets aren't locked, when you push them all the way down the dog locks in that groove on the handle and can't come loose.

That's the way I do it, if a end comes loose and goes under a wheel it can pull so hard it will damage load.

That's what I've been doing.

I keep a roll of .69 cheap tape in the truck, fold the loose end back and tape it to the strap itself. Clean, neat, and secure. I also fold the tail back and place it under the strap before I tighten it, if that particular load allows. I can't stand loose ends flooping in the wind, to me that is a lack of pride in ones work. But that's just me and I'm nobody.

Winches I roll the strap up on the winch. Nice, neat, no loose ends. For ratchet straps, I opt for zip ties...fold it up and secure it nice, neat, and professional appearance to it.

That's how I did it. Never had it come undone.

At my previous job, my boss used to throw the excess to the other side of the trailer and tie a knot in it. Then I'd get the glory of undoing it all. Used to really piss me off. But I did get my exercise
