How to write off meals while out on the road?

and of all the people I have seen get audited I have never seen them do a physical inventory. Normally you have to fill out an inventory sheet and list all the item even down to office equipment, chairs and so forth but have never seen them ask to see the goods. Just if you were to have to do it don't forget to include in inventory.
