The lunchbox ovens are good to have as well.
I love baked potatoes.
They do take a few hours to cook, so I start it a couple hours before I stop for the day.
I often make a great complete meal by steaming some vegies for the last hour in the oven, and getting a whole roasted chicken from Walmart.
Canned goods like soup or beans take about 1/2 hour to heat.
Don't get the Burton oven with the adjustable temp.
I found that it fries the 12V plugs, even on lower settings.

Phoenix is usually good about fixing any payroll mistakes. Also there is a water heater you can buy in the truckstop for about $20 that heat up to 20oz of soup mac and cheese. Works pretty good
