There's another one I've spotted in SC at the TA in Duncan. Same kind of setup. Never tried it but I just love BBQ.
im sure though that it's a pretty intensive way if making a living. All that time you need to smoke the meats. A lot of prep and buying the good cuts of meat. Not to mention the kind of wood you need to make it really delicious. -
By where I live there's a lady who opened a BBQ place by me that's out of this world. They own 10 other ones in Arkansas. She has her brother run it. I met the guy and he showed me the smokers. They are actually indoors and are kind if like a big pizza oven. The lady is originally from NJ so she thought shed try NJ. It's working for her too.

There was another on i65 in Kentucky. Exit 72 I think. Was great bbq. It burned down but they are back open now
