Anybody tried one of those portable induction cooktops in the truck? Zero experience with induction.

I keep hearing about the full home version and people love them.

They require a pure sine wave inverter, so make sure your inverter is up to the task. Not every pot or pan will work on induction. I think an Instant Pot is better overall, unless you want to cook pancakes or something. Between the cooktop and the pots/pans, it takes up a fair amount of storage space.

I've used one myself and it worked fine on a pure sine wave inverter which, as mentioned, is a requirement. It all depends on your plans. Keep in mind that there is zero friction holding that pan in place as the cooktop is glass. Do not move the truck while cooking. There are silicone pads to use if you need better securement. If you want to boil water, or pan fry it works great, but for the latter have a splatter cover or cook on the catwalk. Most things can be cooked just as easily with an air fryer or instant pot.
