Keep chipping away at it. No taters or anything like that, protein. It will come down. Roughly 9 months to go or so before you hit 180.
We buried a cousin at 40 when his heart finally quit. The blood can only carry that oxygen so far in his obese body. They had to cut a stairwell and door to get him out to the ER. The crematory burned twice normal time to dispose of him. Good riddiance I say, what a waste.
To be fair, he did not really have a good go in life during his failed army service partly due to his love of food and went downhill from there. It's a shame.

Keep chipping at it. I went from 265 down to 195 in 10 months. It can be done. Just alot of protein. The big step for me was stopping that red taters. I had to give them up. I loved them too much and switched to sirlion lean ground which I think was 93 lean and 7% fat roughly.

I’ve been really just eating salad and carrots and celery like crazy. It’s more so me just wanting to binge eat sometimes and replacing that with carrots will fill me up quickly at a small cost of calories. I need to find more snacks. When I start driving I plan to make stews and pot roasts all the time in a slow cooker. I figured that’s an easy way to eat something healthy

Add up the calories you are consuming with that salad and carrots etc.
Whatever total you are doing for the day, call it.. 1500 maybe I don't know. Try to set aside 500 of that once a week for something truly satisfying. Be careful though. Its really hard on morale just to graze on salad. It's nice. But its also possible to be really sick of it after a long enough time.
I had three eggs hardboiled this morning with some iced tea. That's enough to get going, nothing like I was eating back in trucking days though with work to do. I try to have one meal sometime in the early afternoon and that will have to be that for the day if I am not engaged in actual work. Otherwise I start gaining again.
Do try to have some bread with your roast if you go that way, watch that gravy though. Au Jus would be my choice even though it's rather light. If you went a proper gravy, it's going to stab you in the back while you smile at the good food. -
But I might be going to the sports bar here soon to celebrate this DOT physical and me being able to start school unfortunately it’s definitely not a healthy meal. But every now and then is okay as long as I go back to my diet right? Haha

I usually only eat one. Maybe two proper meals a day. The rest is just light snacking on carrots and celery. Or maybe some pretzels with hummus

I tried hummus, I couldnt do it. What I do eat once in a while is cream wheat. But that's a winter food if we are fixing to go do something hard that day burn that off.
My thing is a big fat burger with everything on it and a batch of fries and gravy. It's really baaad. sometimes. -
