Okay I found the issue, apparently the wiring at the connector at the coolant tank, which looked factory had two wires reversed.. #3 and #2 slots at the pigtail were sending full 5v to the Signal, so they needed reversing. I managed to figure this one out in 30 mins with no interruptions (always something). Find em, Line em, Test em & Reset em.
I uploaded a wire schematic so you guys know, I think this engine is a newer one in an older model and the wiring went with it so the 04 Pete and 07 Pete are different in that they have 2 wire for 04 & 3 wire for 07.

The best way is install coolant level sensor bypass. These are available on Amazon or eBay.

Fine if you pay attention to your truck. Horrible idea if you just turn the key and go every day.

Never use paperclip to bypass 3 pin sensor. A short circuit results in damage to the control module. It cost me $600.
