For most self-defense purposes a CMV is just someone's personal property or personal vehicle. THERE IS NO FEDERAL LAW prohibiting guns in commercial trucks. You are subject to the state & county & city jurisdictions you travel to and through. You can use the FOPA protections, even in the commie states IF YOU ARE VERY CAREFUL.
If you bring a gun have a plan for if become unconscious and go to hospital for a long stay by ambulance. Have a plan if you unexpectedly discover you are going to deliver to a no-question, no-gun location. Have a plan if you are woken by someone breaking into the truck. Have a plan if you see a mob blocking the road. The only way to be legal everywhere with little extra work is carry no weapons or have your retired cop badge from work in law enforcement. Every other situation has work required, pros and cons, and procedures to follow for the best outcome possible.

There are lots of things that can be used as defensive weapons that are normal to see in trucks
Wasp spray
brake cleaner spray
a fire extinguisher works very well
pepper spray
hammer
tire thumper
collapsible ASP baton (they can be bought with a flashlight on the end so it looks and functions as a flashlight .)
my father had a flashlight that had a pepper spray dispenser tube sticking through the lens .
A nice sharp knife , Spiderco Delica 2.75 inch blade , half smooth half serrated is my favorite
and there are many super bright small flashlights available now
my favorite is the Nitecore P-10OkieDokie405 Thanks this. -
Our microwave at home just died today. I need to buy another but I want to buy one that we can just move to whatever truck we end up in. Is there a max wattage or size that I should be mindful of when ordering so that it will for sure fit and not pull too much power?
