My fluid light turns on after I start my truck! All my fluids are where they should be.

Exactly that's my problem also but if you look closely it says FLUID! Only fluid warning light on the dash!

Might be the Washer Fluid Light

With the symbol panel gone, that could just as easily be a check engine light....
In either case like I stated earlier, unplug the coolant level sensor, clean out the plug and plug it back in.
You might need to get it to a shop to get the computer to tell you which actual light is on. Unfortunately there is simply not enough information left on that panel to be of use. -
Check engine light is to the left of it...its the only fluid warning light on the dash.

They're labeled on the circuit board directly above the lights

And you got to hope the person that didn't remove the symbol panel didn't move the lights around...
Simple fact is the light panel is compromised so it's now not trustworthy. -
They're factory labeled on the circuit board if you look closely at the picture I uploaded...only thing missing is the symbols above the lights!

Brake fluid??? Power steering? Antifreeze? Def? Tranny fuold, different ials
