Good on you for seeing the expired plates. Another way to check, does the legal book for the truck have a current valid IRP registration.
Lessoned learned, cheap so far.
Knowing there is no insurance on the truck, I wouldn't move it one inch.

You gave them a chance already. I would walk.
Obvious they don't care about your professional license.
Going around weigh stations should not be a requirement to deliver a load.
