One thing you can be sure of justin, is that most days will not go exactly as planned. And every day is likely to be a little different, particularly when you are first starting out. Even with the most experienced driver, who is an excellent trip planner, things go wrong. Traffic, truck problems, weather, shippers/consignees. When you have trucks, and you have humans, things are often going to go wrong. But, it keeps it interesting. More or less. . .

I've gotten along just fine without any need of a heavy duty inverter. 12v cooler does just fine, with restocking at a grocery store about every 4-5 days to keep everything fresh. Hot water maker does the trick for most of the rest and sometimes I'll use a microwave at a truck stop or terminal to make a batch of whole grains that I keep in the cooler.
If you need to go with a full on refrigerator, microwave, etc. in the truck then a heavy duty inverter would be required and you should select the company based on whether they allow that or already have it installed. -
