Every dog owner should train their dog not to engage in such behaviors, like chewing up fabric, and so on. There shouldn't be any problems at all. The only problem there would be is the hair that it sheds. Also, if you groom your dog properly, there will be no stink or anything. Like my German Shepherd, she never stinks. Her nails are always trimmed, she's consistently groomed, and I train her daily. She has been in countless hotels and a very small box truck, traveling working as a mobile billboard, all across the East Coast. The only issue was the hair, but that boils down to cleaning, which then becomes no problem.
PS.
in the event of an accident or an untrained behavior, you immediately nip that in the bud and pay whatever fees it takes to replace anything, which I'm pretty sure is why they have security deposits, if I'm correct.
Over the road.

As to your box truck, 32 ft. RV, you can register it in Bushnell, Florida, as your RV/home and use that address as your domicile and also for your mail.
Here's the information:

You're already a Florida resident, so with Escapees you can use that address on your CDL. This gives you more job opportunities since Bushnell, FL is North of Interstate-4.

Look at the mail service there and compare it to this one and decide which is best for your situation:
This one can't be used for a CDL domicile address, but is good for mail service.

If you had a legit setup in Bushnell, FL -- this would put you within 50 miles of DoT Transportation's terminal in Ocala, FL:
55 SW 52nd Ave
Ocala, Fl 34474
from:
Trucking Company Locations | Drive For DTI | Dot Transportation, Inc.
This would make you a FAR MORE attractive candidate for them, as a beginning driver. They are easily one of the best gigs in the reefer business.
Think about it....

Nice looking trucks too!
Trying to find their pet policy, I might have to call them. -
From what I see -- DoT doesn't allow dogs in their trucks.
Sorry.
But.....
