Depending on the appliances. You do not want to run an inverter at or near the max all the time. 75% or less. So add up the amps from what will be running and pick the best you can afford. This will be the constant not peak. AC, Fridges, Micros all have a surge start then drop to steady draw. The spike is approximately the twice the stable draw usually. You need to select by both.

My two cents (adjusted for inflation = ... never mind):

A Fridge, Microwave, and Coffee Maker run identically similar, but completely different - you can quote me on that :) Each has a pretty high initial draw that lasts a small percentage of the total time, then drops down considerably. As far as initial draw, in order of highest to lowest, I would probably guesstimate: CM, M, and then F.

Please remember that an Inverter is not an Alternator, nor Generator. All it does is change DC current to AC current. It uses some to accomplish that, also. 2500 watt should be large enough to run what you've listed, but as someone else pointed out, not at the same time.

The Fridge shouldn't be a problem at all - I could say depending on size, but I think its a mute point since you can only fit so large a one in a truck.

FYI - I only run my M & CM when the truck is idling. The condition of the batteries, the cables used (like my wife says: girth and length matter), and where I can really speak from personal experience - all the connections!

The major point I want to make is that without a generator, or running the truck with the alternator, your batteries really become the biggest issue running some of these appliances for awhile.
