What would cause fluid to be pushed out p/s reservoir?
    1: Is it over filled?
2: Getting motor oil in the system. Is it black?
3: Sucking air in the pump suction line.
4: Something causing the system to be under pressure when it should just be circulating fluid. Over heats expands, foams, etc.
What is hot? Started a 2010 388 today, then got busy for an hour, pump was 170F. sector was 115, reservoir was 160. No heat gun? If you want to play hot potato it would take some pretty serious motivation for me to keep my hand on the reservoir over 6 seconds.
    Hissing sound in hydraulics?
    1: Air in system?
2: Fluid forced through a relief valve or orifice which also creates heat.

Normal hydraulic system test procedure is to test the pump with a pressure flow meter. There is some online info for TRW steering and Sheppard may have some also. That's about the best I can do. Good luck to you Joe.

got pump, filter and pressure side hose changed...

turning wheel to the right seems to be working ok, however, turning the wheel to the left feels like it initially doesnt want to turn. almost like it needs to build up pressure before it will turn and then turns ok. not sure how to better describe when turning wheel to left.

Very common when there's still a little air in there. You probably have an inverted box, is your grease zerk on top? If so, there is a manual bleeder on the box not far from the grease zerk. With the engine off, take that bleeder screw out and put it back in as soon as fluid comes out without any bubbles.

Here's the instructions, bleeding is on the 3rd page:
