I only eat a full meal after I'm done for the day...up until then its just a sandwich or some type of snack.
Stay away from soft drinks (Pepsi and things like that)...drink more water (but not so much you have to stop and pee every 50 miles)
Plan your trips...know where you are going to stop to fuel, bathroom breaks, snacks, stretch your legs, etc. before you leave that morning.
And most of all...know when to say when. If you're too tired to drive...go to bed. It really is that simple.
