Yeah the numbers may not be what you want to focus on, I generally take off unloaded in 5th gear with a trailer, 6th bobtail, but I have driven trucks that don't have nearly the power to do that but still had the same Eaton 10 speed I have.
You just need practice it sounds like.

simple shifting is progressive on the tach each shift should be done 100 rpm higher than the last, the transmission will shift even without the clutch if you follow that rule of thumb. Once you have been at it a while you can tell by the sound of the engine. How downshifting you want to drop to about 1000 rpm pop it out of gear, give it a little fuel pedal and shift to the next lower gear. again this will let you shift even when not using the clutch. With practise you will get it. But for the test they will want you to double clutch, which is clutch shift out of gear release clutch, push clutch back in move stick to next gear release clutch. Most new trucks will start out in 2nd with an empty trailer without any accelerator at all.

OP, I'm in CDL training, myself. I'm finding that the shifting is difficult, as I'm not that coordinated, but I am improving with practice. I'm much better, now, than when I first started. Just keep up with it, and it will all fall into place.
