Most P-pumps I've dealt with have custom cams in them, but the cam itself makes little difference in rate of injection compared to the top end parts. The cam makes a tremendous difference in pressure and volume ability.
Ya, you can get a lot of HighPo parts for the P-7100 series these days and I agree for most people you can get close enough to a Sigma that a P-pump will do. But you still can't really match a Sigma's injection rate even with custom scroll/rack work on a Bosch.
And then of course just as there are custom parts for the Bosch so are there custom parts for Sigma based pumps.
For most a P pump will do just fine as you say. -
If you want to throw up a little, a local guy had a very heavily modified tractor with a CDS billet Sigma. Engine threw a rod which is bad enough but the rod hit the pump and ruined it also. Needless to say the new engine had a 1" steel plate between the block and the new pump.:smt078

Ok, found another guy in Holland that has a few of what I believe are the correct Sigmas available. He is sending me pics today so I can verify. Found out what the correct model numbers I need to look for are as there is RM, RMS and RMX series pumps. I have found them so far from 2000 Euro (which needs to be rebuilt with 16mm elements) all the way to 5000 Euro which are preped and ready to go and modified for more fuel then stock. Also found a shop in Italy that has rebuild kits for these pumps and plent of parts. Just a few things i will shed a little bit of light on. The one Columbus Diesel sells are modified Sigmas not stock Sigmas so I can see where a few of the extra dollars are going in. And these pumps were found in everything from trucks , boats and locomotives (6,8 and 12 cyl) but the ones most Dodge owners look for are the 6cyl applications found in 70's Renault Trucks.
