I haven’t done any research on mini-splits, but the first one that came google,it shows to draw 875 watts. I don’t know what else you plan to run, but I’d maybe talk with someone that installs solar systems for a living.

I read about this new power unit, launched on the market last month, about 1000$. The AC units needs about 1kw for every 3500btu,: would a couple of these power a small truck AC, but are heavy 50 lbs each and not sure if lithium baterries are legal and safe in trucks.

I'd say that sounds like a solid plan for your truck. I’ve been messing around with solar for a while now, mostly for homes and farms—like the setups you see with solar panels Ireland —but I’ve seen some cool setups on vehicles too. One thing I’ve noticed is placement really matters—keeping them in full sun as much as you can makes a big difference.
I’ve also heard that getting a good MPPT controller is worth it—people say it makes the whole system way more efficient.
